Hubbard Squash from Gemini Farms, Las Trampas, NM

I think I found the prettiest hubbard squash at the Santa Fe Farmer’s Market today…  Have you tried hubbard before?  The Gemini Farms stand at the Santa Fe Farmer’s Market has the most beautiful Fall/Winter produce and just brought out their first crop of hubbards to the market today.  I am very excited!  When roasted in the oven, it is super sweet and delicious on its own…but I am thinking it might be time to make a new batch of Pumpkin Spice Cake very soon!
